It took me a while but I finally figured out that breakfast is the most important meal of the day. Now that I’m actually eating breakfast (and rather enjoying it), I’m venturing out beyond cold cereal and breakfast bars. Since time is of the essence in the mornings (I am sooo not a morning person), when I want a warm breakfast with a little variety, I whip up some breakfast tostadas with sausage.
Versatility is key with breakfast. We don’t eat the same thing for dinner every evening, so why do we do it with breakfast? This morning I woke up at 5:20 am, which for me, is like finding a four-leaf clover. It just does not happen, even with the best intentions. Instead of spending my time on Facebook (OK, I spent a teensy, weensy bit of time there), I decided to make a quick and easy breakfast with ingredients I already had at home.
I typically prefer a tostada over a burrito or taco for one simple reason, I’m a messy eater. With a tostada I can use a knife and fork without looking ridiculous. It literally takes minutes to get everything ready and you can have a variety of ingredients for people to pick from. For me, I still with the basics: eggs, Wright brand sausage, tomatoes, avocado, shredded cheese and corn tortillas.
Now, I know what you are thinking. It takes too much time to cook sausage in the morning, PLUS, you don’t want to smell like sausage when you go to work. With that, I say no worries. All you have to do is go to Sam’s Club and pick up a package of sausage and cook up a batch when you get home. I usually cook one of the styrofoam containers (you get three in a package) and use it for the entire week. It heats up in the microwave nicely and in fact, tastes really good cold. Not that I would know anything about that. Also, selected Sam’s Club will have a demo on January 31 and February 6-7. Check out your local store for details since sampling food before you buy it is so much fun!
Then all you have to do is cook your eggs (because reheating eggs does not work, trust me on this) and assemble your tostada. You can even cut up your tomatoes and avocado the night before. Just make sure you have enough sausage because you should never, ever skimp on meat. 🙂

- 3 Eggs
- Roma Tomato
- Shredded Cheddar Cheese
- Corn Tortillas
- Sour Cream (if desired)
- Salsa (if desired)
- Cook sausage according to package instructions and set aside.
- Lightly beat eggs with a touch of milk and scramble over low-medium heat.
- While sausage and eggs are cooking, chop avocado and tomato.
- In a hot skillet, lightly toast the tortilla and then layer the ingredients to your hearts desire.
