Every person needs a signature dish. For my friend Staci at 7 on a Shoestring, she makes pea salad and my friend Kerri at The Maven of Social Media, she rocks the creamy artichoke and spinach dip. Me? I really like variety so I tend to bring different things all the time. I used to get requests for my sweet potato rolls but since I’m trying (key word trying) to cut back on the amount of gluten we consume, I decided why not make the awesome kale Waldorf salad that I usually buy at Whole Foods and make that my dish. Creating holiday traditions is something that is important to me and what better way than with real food.

My daughter and I love to cook together. Since we was old enough to hold a spatula, she’s been in the kitchen with me mixing, pouring and licking (yes, I let her lick the spatula) all types of foods. For me, cooking brings back memories of my Grandmother who was a phenomenal cook. Her food specialty was comfort food. Green beans with just the right amount of bacon, mashed potatoes that would melt in your mouth and the best yeast rolls I’ve ever had. Since I’m trying to eat a bit healthier at home (so I can be bad when I eat out), and teach my daughter healthy eating habits, I’m being brave and introducing a dish that has never been served in my parents home before. It will either be a hit or complete bust, but no matter what, it will be my new holiday tradition: making my family try something different each year. They should thank me that I didn’t go with the brussel sprouts.

This kale Waldorf salad is super simple to make and you probably have most of the ingredients in your pantry. There is so much flavor in the dressing that even your pickiest eaters will like it. Sure some people are going to hesitate and make faces when you tell them they are eating kale, but do what I do and just call it an “apple salad” and serve it in a beautiful bowl like this one I found at West Elm. I fell in love with it the moment I saw it. The color spoke to me and it was the perfect size for serving. Then to dress up your table even more, add a couple of cute owl salt and pepper shakers. Aren’t they adorable?

I hate that living in Wichita I no longer have a West Elm just around the corner. Now that just means whenever I need a cute serving dish or to buy myself a housewarming present, I just do it online.

Creating Holiday Traditions One Bowl at a Time: Kale Waldorf Salad

Healthy twist on a classic waldorf salad.
Ingredients
  • 4 cups packed finely chopped raw kale
  • 1 large red apple, such as Fuji or Honeycrisp, chopped, divided
  • 1 cup thinly sliced celery
  • ½ cup walnuts, toasted and chopped, divided
  • ¼ cup plus 2 tablespoons raisins, divided
  • 2 tablespoons Dijon mustard
  • 2 tablespoons water, more if needed
  • 1 tablespoon red wine vinegar
  • ⅛ teaspoon sea salt
Instructions
  1. Place kale in a large bowl. Add half the apple to kale along with celery, ¼ cup walnuts and ¼ cup raisins.
  2. Put remaining apple in a blender along with remaining ¼ cup walnuts, remaining 2 tablespoons raisins, mustard, water, vinegar and salt. Purée until well combined and slightly thick, adding water if needed to thin.
  3. Pour dressing over kale salad and toss to combine.
