In four days, the movers will be at my doorstep. I’m not sure that I’ve made the formal public announcement on either blog, but for those of you who aren’t in the loop, my daughter and I are moving to Kansas. Home of sunflowers, Jayhawk basketball and of course, The Wizard of Oz. I’m not new to this moving gig. I’ve done it quite a bit. Since this is our last week, I’m using up everything in the pantry and going to my short list of easy dinner ideas.
We always seem to have pasta on hand. I know it goes straight to my belly (literally and figuratively) but I love it. I love that in 6-7 minutes it’s cooked and that I can put a variety of sauces on it and it still tastes good. My daughter is all about red sauces and turns her nose at me if I try to put pesto or alfredo on her pasta. We both agree that butter on pasta is heavenly.
The other day I was shopping in Walmart and saw a product I hadn’t seen before. In the dairy section, on the very top shelf, were some Land O’Lakes Sauté Express® Sauté Starter in a variety of different flavors. I knew I had some shrimp and pasta that I wanted to use up so I decided to try the Lemon Pepper flavor in my version of shrimp scampi. Since I’m trying to use what I have and not buy a ton of groceries this week, having seasonings, butter and olive oil in one little packet was just what I needed.
Shrimp scampi is one of those foods I make when I feel thin because I always go back for seconds. Or thirds. And I always take more than my share of shrimp. Instead of using onions, I like the flavor of shallots and always add a few slices of sliced lemon. I also add cherry tomatoes to give it another layer of flavor.
This is one of those meals that literally takes minutes to make but seems like you’ve slaved over a stove for hours. Surprisingly, by using the Land O’Lakes Sauté Express® Sauté Starter, I didn’t have to add extra seasoning to my dish. Talk about the perfect meal when you’re trying to clean out your pantry!
- 1 lbs medium size shrimp, peeled & deveined
- 1 lb linguine or other pasta
- 1 Land O’Lakes Sauté Express® Sauté Starter
- 2 cloves garlic, diced
- 1 shallots, diced
- ½-1 cup cherry tomatoes
- ½-1 cup white wine or chicken broth
- 1 lemon, sliced
- 1-2 tbsp Italian parsley, chopped
- Cook pasta according to package directions.
- In a large skillet, add 1 Land O’Lakes Sauté Express® Sauté Starter. Once melted, add garlic, shallots, 3-4 lemon slices and cherry tomatoes. Cook for 3-4 minutes.
- Add wine and let cook for a minute, then add shrimp. Cook until shrimp are pink, about 3 minutes.
- Add pasta to the skillet and garnish with parsley and sliced lemon.
