Spinach Artichoke Dip {Easy Dip Recipe}

My take on Bon Appetite's spinach artichoke dip.
  • 6 oz pkg. frozen chopped spinach, thawed, drained & squeezed dry
  • 2 8 oz pkg light cream cheese
  • 1 cup light mayo
  • ½ cup light sour cream
  • 1½ cup shredded parmesean cheese
  • ⅓ cup shredded monterrey pepper jack cheese
  • 2 garlic cloves, crushed
  • 15 oz jar artichoke hearts, drained & chopped
  • 1 tsp lemon juice
  • ¼ tsp ground red pepper
  • 2 small tomatoes, seeded & chopped
  1. Pre-heat oven to 350F
  2. Set aside ¼ cup of parmesean and the tomatoes.
  3. Mix all other ingredients until well blended. Spread into a shallow baking dish. Bake about 20 min. or until bubbling and slightly browned on top. Remove from oven and garnish with reserved parmesean and tomatoes.
  4. Serve with multiple flavors of The Better Chip (my favorite is Red Pepper)
