I remember the first dinner party I ever threw. I had just returned from a week in Napa and Sonoma where I attended my first cooking class. The food we prepared was so tasty that I wanted to share it with all of my friends. In typical over doing it fashion, I decided I would recreate all the dishes we were taught at the cooking class. Quickly, I realized that I had too much on my plate (pun totally intended). Now, if I’m entertaining I make one signature dish and then supplement it with quick and easy foods that look like I spent a lot of time in the kitchen. My latest creation: loaded pierogies.

I love loaded baked potatoes but it’s not something I’m going to serve when I have friends over. This is my alternative to a potato bar. It is 100% a cheater recipe and guess what, I don’t care. 🙂  It takes minutes to make and is so easy, you can delegate it to anyone who offers to help. The veggies and bacon can be chopped up ahead of time so all they have to do is bake the frozen pierogies (you didn’t think I was making these from scratch, did you) and then assemble them.

Serves: 8-10
Frozen pierogies make a simple and delicious appetizer.
  • 1 box frozen pierogies
  • 3-4 slices of bacon, chopped and cooked
  • 2-3 sliced green onions, white & green parts
  • 1 small tomato, seeded and chopped
  • ¼-1/2 cup shredded cheese
  • sour cream for dipping
  1. Cook the pierogies according to the package directions. I typically bake them.
  2. While the pierogies are baking, cook the bacon and chop your veggies.
  3. Once you remove the pierogies from the oven, immediately sprinkle the shredded cheese so it melts a little and then sprinkle the green onions, tomato and bacon over the top.
  4. Serve with sour cream for dipping.
