School is officially in session at the East 9th Street household! Brecken’s first day at a new school went off without a hitch. She even told me that tomorrow I don’t have to walk her to her classroom, she’s a big kid and can do it by herself. Now I’m not sure how I’m supposed to feel about that. Part of me is proud of my shy kid for wanting to this by herself, the other part of me is wondering if she’s getting to the stage where she’s embarassed by me! I promised her I wouldn’t show up at her school in my pajamas…what more could she want?! 🙂
To celebrate a successful day at school, I decided a bedtime snack was in order. Glancing in the refrigerator and pantry, I had a couple of options. One, we could chow down on some 4-month old chocolate candies. I’m sure they are still good (in fact, I may sample them in an hour or so) but it’s not really what I wanted to feed Brecken right before she went to bed. Looking for a fun option, I got creative and set up a make-your-own pudding bar.
For the past week, I have been eating Kozy Shack rice pudding as my bedtime snack. It’s pretty darn good plain but I figured it had to be really good with some toppings. At the end of the week, the pickings are slim in my house but I did find some strawberries and blueberries that were still edible. In the pantry I found some slivered almonds and one of my favorite things, sweetened coconut. A little cinnamon and nutmeg and we had the perfect mix-ins for our rice pudding.
Brecken went for all fruit, a combination of blueberries and strawberries. For me, I did a combination of strawberries, almonds and just a bit of shredded coconut for some additional sweetness, mixed into one 4 oz cup of rice pudding. I figure if you’re going to snack before bed, snack on something that tastes great!
We’ll see how tomorrow goes. My shy kid just might want me to walk to her classroom with her and that will be perfectly fine with me. 🙂
